  • Originated from South India

  • A type of savoury rice cake, popular as breakfast foods in southern india and sri lanka.

  • Made by steaming a batter consisting of fermented black lentils (de-husked) and rice.

  • Fermentation proces breaks down the starches so that they are more readily metabolised by the body.

  • Have several variations like rava idli.

  • Since plain idlis are mild in taste, usually a condiment is considered essential. Often served with chutneys (coconut based), sambar and medu vada.
